FAMILY STORY

A decade ago, two guys from Morocco – complete strangers to each other – moved to Virginia in pursuit of the American Dream. Hicham and Isalmou met as line cooks in a restaurant, became fast friends, and are now restaurant owners and entrepreneurs.

The two friends met Kevin, a native Hawaiian who was an award winning chef and an executive in a restaurant franchise. After they got to know each other at work, the three started hanging out together.

They found they shared a love of food, a fierce work ethic, and a sense of humor that never ends (really – they are always laughing).

In 2017 they opened Koobála, embracing their future together.

The Koobála flavors from North Africa and Hawaii are inspired by the friends’ native cuisines – plus Latin American food, which they can’t get enough of.

Interestingly, Kevin recently took a DNA test, and – surprise – he is part Moroccan.
